Summer cocktail recipes by Robin Pope Safaris

“I want my toes in the sand and a cocktail in my hand.” – the mantra of summer time.

We who find ourselves with our bums on the African beach or in the bush in the summer are the lucky ones. Long hot days, custom made to be action packed and wild or oh-so-languidly-lazy, depending on our mood and setting. Sunscreen and hats and happy, happy faces. That’s what summer is made of. The mandatory accompaniment to any African sunshine scene? Cocktails of course.

Robin Pope Safaris insists that good cocktails are an intricate part of an African holiday. They set the travel-style scene after all. Whether as sundowners, watching the egg-yolk sun set in the wilderness or as an extension of your arm as you lay on Lake Malawi’s postcard-worthy beach, cocktails are summer’s best friend.

Here are some of Robin Pope Safaris’ recipes for their cocktail specialities:

Stanley Safari Lodge – Livingstone, Zambia

Stanley’s Welcome Surprise

– Freshly squeezed lemon juice

– A teaspoon of gomme (sugar dissolved in hot water)

– A few drops of bitters

Pour into a tall glass and stir gently. Top off with a slice of lemon. Serve chilled for a refreshing drink after a long day’s travel.

Mkulumadzi – Majete Wildlife Reserve, Malawi

Mkulumadzi Ice Tea

– 5 Rooibos teabags

– 5 Tbs sugar

– 5 Tbs lemon juice

– 2.5L hot water

Steep the tea, sugar, lemon juice and hot water together and allow to cool. Chill in the fridge and serve over ice with a slice of lemon and a sprig of mint. Sip slowly for ultimate refreshment on a hot day, while taking in the wild Majete surrounds.

Malawi Shandy

– a few drops bitters

– 1 bottle chilled ginger ale

– 1 bottle chilled lemonade

– ice cubes in a frosted glass

Mix all together and serve. Tastes best just after a game drive while the heart is still racing and the feel of Malawi’s wilderness is still wonderfully stuck to you.

Pumulani – Lake Malawi

The Pumulani

– ½ shot Blue Curaco

– 1 shot Malibu

Shake together alcohol. Fill a beer glass with crushed ice and pour in the alcohol. Top up with ginger ale and sprinkle with coconut.

This one just oozes beachside bliss. Have one in hand all day long on the Lake Malawi shore.

Lady-Passion-cocktail-Pumulani

Lady Passion

– 2 shots gin

– 1 shot Triple Sec

– 1 shot lemon juice

– ½ shot passion cordial

Shake it all together and poor into a martini glass filled with with crushed ice. Top up with soda water.

Another Pumulani favourite which goes hand in hand with beach umbrellas and Lake Malawi views.

Lake Ice Tea

– 1 tot tequila

– ½ tot Bacardi rum

– ½ tot Malawi vodka

– ½ tot Malawi gin

– ½ tot Triple Sec

– ½ tot freshly squeezed lemon juice

Pour in to beer glass with lots of ice and fill up with Coke. Inhale. Exhale. Chill out.

Fish Eagle

– 2 tots Malawi gin

– 1 tot freshly squeezed lemon juice

– 1 tot Sugar syrup

Pour into beer glass over lots of ice. Top up with soda water and garnish with a slice of lemon. If the sun is out (which it always is), it’s time to gaze at the lake and have a cocktail.
