Create your own lamb burger, excellent with an ice cold beer…
350g lamb mince
1 onion, finely chopped
cloves garlic, finely chopped
flatleaf parsley, coarsely chopped
¼ tsp salt
black pepper, freshly ground
tub of store-bought tzatziki
tsp fresh mint, coarsely chopped (to add to the tzatziki)
truss of vine tomatoes, flash-fried in a hot pan
butter lettuce or rocket
red onion, sliced
Mix the mince, onion, garlic, parsley, salt and pepper until well combined and then shape into 4 patties.
Heat the oil in a pan and fry the patties over a medium heat until golden brown and cooked.
Cut hamburger buns in half, top with the butter lettuce, red onion and patty.
Top with dollops of jazzed up tzatziki and finally add the flash fried tomatoes.
Delicious served with potato wedges or oven chips.
